Angel food cake...I found where I posted this a while back on the Balut thread.

I use a hand whip but you can use a mixer to beat the egg whites. The mixer will put more air in the cake and it will be taller than the hand whipped batter.

Use a cake pan with a center tube. Mine is square while newer ones are round.

Angel Food Cake
NanaKat​

1/2 cup sugar (sifted 2 times)
1 cup cake flour (sifted and then measured)
1/2 tsp salt

Mix together and sift 3 times.

10 egg whites (room temp)
1 tsp water
1 tsp lemon juice

Whip until foamy (barely holds a point that curls over).

Add

1 tsp cream of tartar - whip until stiff, not dry.
1 cup sugar (sifted 2 times): add 1 tsp at a time until all is incorporated.

Fold in
1/2 tsp vanilla
1/2 tsp almond extract

Now gently fold in reserved flour/sugar 1/4 cup at a time until all is added.

Pour batter into a clean (no grease) tube cake pan.

Cut with knife in widening circles to break air bubbles.

Bake by method 1 or 2.

1. 425°F for 30 min. or done (toothpick test) for a cracked top.

2. 375°F for 15 min, then 250°F for 15 to 20 min until done.

Remove and invert pan until cake is cooled completely.

Carefully cut loose from sides with a knife.

Cut cake with wire cake cutter or two forks.

Had a bit of a scare today when I went to round up my chickens (they were free-ranging this afternoon). I called them and put them in the run, then realized I was missing one. Finally found her wandering around in the front yard. She got through the gate somehow and couldn't figure out how to get back :he
Of course by the time I found her she had realized everyone else was gone and was getting frantic. I have given up on even trying to catch my hens when they are like that. So I went back to the run, and picked up my cockerel. Carried him through the gate and set him down right next to her. He took care of getting her through the open gate and into to the coop :D I just shut everything up behind them.
