Do you do any dutch oven cooking?My very favorite recipe, go camping and put cut up chickens over the fire. It smells wonderful, tastes wonderful, and dang we have 2 more months of winter here. Love campfire cooking!

Broiler is the size of the bird, and traditionally ( old tradition, not since the cornishx age) also had an age with it older than the cornish x will be; Hen is is hen-- are you menaing " cornish hen" or as in age "hen" meaning over a year??

Ok. I'll try calling back. A few of the meat markets asked me what was a broiler.:/
It may be just me, but I would be wary of a meat market that didn't know what a broiler was. The meat market I go to costs more then grocery stores but less then health food stores and can tell you everything down to where the meat was raised and the age at butcher. (With the exception of their part time cashier... she knows nothing but how to run the register.)

Broilers (cornish x) are great to fry, bake, grill whatever. Doesn't take only about 45 give or take for cut up pieces for the grill or oven, give or take, to bake the whole bird, a bit longer, probably a little over an hour --- use a meat thermometer until you are comfortable with your results.Sorry for the confusion. So, I'm wondering if an 8 week old broiler takes long to cook as well or not because it's only 8 weeks old but at the same time, the broiler will be heavier.

I could feel my spinal cord crawling up into the back of my neck, ready to pounce on these people like a spitting cobra! I can imagine this exact scenario all over the country in these yuppy places.
The only thing is missing from making it even more funny is showing the waitress going back into the kitchen to get that dossier on Cullen while the chef is in the background carrying a box from the freezer with the big Perdue label on the side and pulling out a chicken for preparation.![]()

When you talk older hen, young culled roosters from dual purpose breeds or many breeds that are not meaties...bake them low and slow, or easier yet crock pot for several hours. Takes them time to get tender, but the result is still a very flavorful bird. We butcher all of our xtra roos and anything that is not suitable for breeding. Takes more time to cook, makes great chicken and homemade noodles!
