I'm gonna say male
For me, it's the stance and overall shape of the body. Just... looks more roo like.
But I can't see any of the pointed feathers coming in.
BUT the hackle feathers, while not pointy, seem to drape a lot more than female feathers
BUT!!!! the comb and crest look virtually the same as the other two.
BUT!!!!!!!!! Idk someone help.

11 weeks is still early for Polish. A couple of them look to have thicker legs and at least one looks like it has a cockerel's stance. However, neither of those things are conclusive. If you can catch them, then look at their combs, which are small, v shaped, above the cavernous nostrils that Polish have. The combs may be buried in the crests. If you see development or redness of the comb on any of them, then that or those birds are probably cockerels. If not, try again around 14-16 weeks, and we can check for male specific feathering. I do hope you get what you want, which I'd imagine is pullets.

I've tried to get a good look at their combs but idk, they all look the same to me.
I very much DO want pullets! And Zoe is the friendliest of the 3!
