My mom makes me "giggle soup." It's very similar to egg drop soup in Chinese restaurants. She puts two or three eggs in a bowl of flour, mixes it up into a dough, then drops peices of it into a pot of boiling chicken and rice soup. She boils it until the egg dough is hard, then serves it with black pepper. I love it!

That's what I'm going to make when one of my pullets lays the first egg.

Sorry for the lack of measurements. I never made it myself, I just watched her make it.

I have also tried something with french toast. I blend with a blender or a bullet blender and I have found that this makes a foam that sokes up and cooks better.
 
My favorite is to make French toast with English crumpets! I like to add a sliver or two or hot red chili (idea courtesy of Jamie Oliver) and then smother it with New Hampshire maple syrup. Yum.
 
English crumpets with orange marmalade. Oh wait that isn't an egg recipe.
