3 different Temp & Humidity readings!?!?!

I'm not sure how to calibrate a thermometer that is built into the incubator. Any suggestions? I tried comparing it to a meat thermometer put into the incubator but that was so different I didn't even want to trust it. For example, my meat thermometer read the 32 degrees glass of water as 34 degrees and then in the incubator, where the thermometer reads 99.5, my meat thermometer said 98.6, which would mean the incubator is off by 3 degrees? That seems like a lot. I just set my eggs in there today, so there's time for adjusting, but I'm concerned about getting this wrong. Being able to test the thermometer in the incubator would be better, but how?
 
I went and got an old-fashioned glass thermometer, and then a new Weber probe thermometer for $12.95. Boil or heat water, then dip the glass thermometer in it, then the digital. See what they both read. I found out the Weber was exact!
Then I checked it against the incubator by placing it in one of the vents. I got super lucky and BOTH the new probe thermometer AND the incubator are reading correctly! I spot check a couple of times a day and so far, so good! I'm less worried about humidity, it's around 41% in my house, so its not hard to maintain 50%.

Becareful with the humidity being at 50.
That is very high.
Closer to 30-35 would be much better, imo, with our weather.

I've been doing dry incubation, and my incubator is usually around 25%. I had read it could go as low as 15%. Should I try to raise it?

Side note: I know you were worried about my eBay eggs, Kiki. These are from my birds.
I think 15% is too low.
If you keep it at 25-35 it should be close to perfect, but if you haven't salt tested your humidity gauge you can't trust the reading.
 
Update: So the Farm Innovators 4250 appears to read correctly from the factory.
The Little Giant however, is about 4 degrees low, causing the incubator temperature to be outside the optimal hatch range. I'm going to see about getting a replacement control unit to see if that works.
