Adult Rooster Breed Debate...HELP!

I'm on a colored egg kick right now. My face lit up like a kid on Christmas for a minute there.

Ok...He MAY be a Production Red (which is a NH/RIR cross) but can anyone explain his massive size? I feed him the same amount as every other standard size chicken I have and he just keeps growing. He was born last year and already weighs 11.5 lbs. I don't know if I should restrict his food intake (like with Cornish Roasters) or simply let Mother Nature take over and hope for the best....My Black Jersey Giant hens are close to his weight. I am breeding him to three Black Jersey Giants, 2 Golden Comets and another (apparently) Production Red hen. He and the BJG hens will produce HUGE chickens! I have eggs hatching in the incubator on the 28th. HOPE I GET ANOTHER HUGE ROOSTER (Production Red/Black Jerset Giant? Odd cross) I WONDER IF ANY OF THEM WILL GROW UP TO BE BLACK?
