i always bring a hen into the house to put a saddle on her. Then I put her down on the floor. She will do all kinds of contortions until she gets used to having it on. This usually only takes 10 or 15 minutes and she forgets that it is there. If she is making these contortions in front of other chickens they will think something is wrong with her and attack. Once she is used to having it on I've had no problem taking her back to the flock. 
p.s. The rooster may have been attacking the saddle instead of the hen because he thought it was something hurting her. The other hens will just follow the rooster's lead.
