I was looking around for recipes to use up the 30 or so eggs we get a week and I came across an absolutely awesome website [link below]. It has tonnes of recipes. I've tried a few and they were great. Here's one of my favourites:

Apricot Mousse: I found that this was a very nice dessert but not very sweet. If you are used to sweet desserts like chocolate mousse then I would suggest adding some sugar.

Ingredients:
2 Sunny Queen Egg whites
1 ripe banana
1 cup cottage cheese
400g canned apricots in natural juice
1 tbs powdered gelatine

Directions:
Peel and chop the banana, place it in a food processor with the cottage cheese and blend until smooth.
Drain the apricots; reserve the juice and a few pieces of fruit for garnish. Process apricots with the banana mixture for a few seconds until finely chopped.
Warm 4 tbs of reserved juice and dissolve gelatine stirring with a fork.
In a large bowl add the gelatine to the fruit mixture, mix until combined.
In a separate, clean bowl, whisk the Sunny Queen egg whites until they form soft peaks.
Gently fold Sunny Queen egg whites into fruit mixture then spoon into glasses and chill in the fridge until set.
