Amber Star X

Has anyone every bred an Amber Star? I have an Amber Star Rooster who is a fine specimen and I would like to breed him before we have to process him. (Too many roosters).
I do not have an Amber link hybrid to breed with him and I do not know how genetics really work. I do know however his breed is very proficient at laying eggs. Here are my choices for breeding him:
Whiting true greens
Whiting true blues (white colored, and red/white) color
Bielifelders
Black Australorps
Black Cochin
Isa Brown
Light Bhramas
Dark Bhramas
Polish
Black Copper Marans
Bluebell eggers
Easter eggers
Columbian wyandotte
Golden laced wyandotte.

Because genetics go right over my head, what would make for some interesting crosses? I've heard that hybrids do not breed true?
