I didn't think it would be worth the trouble for the legs.I just pluck the feathers from the breast. Toward the butt you pull back and up higher just pull toward the head in quick jerky motions. I slice right down the breastbone, pull skin back and slide the knife right along the bones. It’s simple and takes like 2 minutes. I only keep the breasts on ducks.

Don’t forget to marinate the breasts for a day or two then wrap in bacon and grill till bacon is crispy.I didn't think it would be worth the trouble for the legs.
