If I had to choose one leafy green to give him each day which would be the best one.

The spring mix that I buy is mostly spinach.Niven loves kale too.
Personally though I do not feed dark leafy greens like kale, collards, turnip greens etc every day. My vet warned me that adult rabbits can be prone to calcium stones and to avoid feeding dark leafies too much/ too frequently. Lettuces are much lower in calcium as are endive, radicchio, and herbs like cilantro.
I buy Niven a big box of spring mix (mostly mixed lettuces) every week then supplement with small amounts herbs and the high calcium greens I buy for Tad. Niven only gets the high calcium stuff a couple times a week.
Bummer that your spring mix options are spinach heavy (FYI spinach is also very high calcium) Lettuces are a great option though. You should also have him try some cilantro too since he is a mini mini mexThe spring mix that I buy is mostly spinach.

I'll just give him the green or red leaf lettuce every day as part of his food not treat and then once a week I'll give him a piece of kale and a piece of apple on different days as his not treats.

It takes awhile. Tad needs lots of calcium (but not too much phosphorus, oxalates, or goitrogens) so I have had to spend a lot of time looking up the nutritional info for various vegetablesI need to go back and do some more reading so it sticks.
