Another Attempt at the Pickled Eggs!!!

Well by golly, I've tried every method out there myself I think except this one for fresh yard eggs, so I'll give this a try.

My granny used to use her banty eggs for pickling as one poster said. She also used leftover pickle juice with added vinegar and pickling spices and sometimes beet juice for color if she had any. I never remember not seeing pickled banty eggs in her fridge or on the table when she served a meal. This is slightly off topic, but she always kept a large mason jar of stewed prunes with lemon slices in the fridge as well, LOL. Whenever we were sick, she would make us eat a few. Hey, it was better than a dose of Castor Oil any day. Went and stayed down easier too.

I read thru this post and felt it was only fair that I share my Cajun pickled egg recipe with ya'll.


Boil eggs and peel
put eggs in a jar
we usually use a large gallon pickle jar
pour in a can of beets
then heat white vinegar and pour over the eggs and beets
then add some liquid seafood boil
you will have to play around with the amount you use depending on
your own taste and the size and amount you are making.
For 2 dozen eggs I use about 2 to 3 tablespoons if you like them pepper hot
use more.

Warning the beets really soak up the pepper from the seafood boil so they are always spicy.
we leave them set out of the fridge and they do fine if you like them cold let them stay out of fridge at least a week before putting them in the fridge. The lady that gave me this recipe has passed away but she use to make them for a Bingo hall I was a member of and we would sell out every week.
 
I am really thinking that my biggest mistake was using the "malt" vinegar..the apple cider vinegar, as opposed to the white vinegar..also, as someone posted earlier, I should have left them sitting on the counter and not refrigerated. My husband loves them so I could, possibly, maybe, not sure though, be prompted to try them again with some of the recipes you all have posted. They certainly are popular here in the south and I see them in mom and pop stores and at the Farmer's Markets too. So maybe...

OMG- you have to make my gramma's picklie eggs- they are THE BEST and SOO easy!

Use pickled beets. You can buy them at the store, but I make my own b/c they're much better. Here's a recipe for pickled beets:

Cook your beets. Chop and put in a bowl. Cover half way with apple cider vinegar. Then top with water. Add 1 c. sugar. Add mulling spices. Simmer on the stove for about 20 minutes. Can with juice.

Picklie Eggs:


Boil eggs.

Peel cooled eggs and put in a large-ish jar.

Pour one can of pickled beets over top of the peeled eggs.

If the juice doesn't cover the eggs, top with cider vinegar and 1 tbsp. sugar.

Let eggs marinate for at least 3 hours.

YUM YUM YUM !!!

And so very easy!

Thanks everyone for all the awesome recipes..I guess this would be a great way to use some of the surplus eggs we all have!!

I can't even imagine eating a pickled egg that didn't have beets with it!
I canned pickled beets from my garden and now we eat 1/2 the jar for dinner and then add eggs to the remainder and put it in the frige for a couple of days and have pickled eggs!
 
Well I did try this again and they look awesome this time..yes I added the pickled beet juice!!! I have also been adding salt to the watr when I boil (thank you so much for whoever left that handy tip!!) and the eggs, fresh or not, peel like a dream...sooo, we'll see how these come out!!!
