Thank you Bigredfeather. I do the same,...well, I TRY to do the same, but I am just no good at it. Getting that windpipe out takes me longer than most anything else! It's slippery, and makes me swear. A lot! I am done with meaties for the year here. I love free ranging them, and it's just too darn cold around here now, and only going to get colder so imagine they'd likely stay huddled in the tractor. That equals a lot of poo, and unpleasantness for me. But next year...I'll be back on windpipe duty for over 100 meat birds...(staggered batches). If I don't have the hang of it by the end of the summer, well shoot...I'll just have to get 25 more cornish in the fall and try again hehehe.
