Carribean Chicken Breast
Russian Dressing (Just enough to cover)
1/8 sweet Onion
1 clove Garlic( crushed)
1/4 Green Bell Pepper - Diced Fine
1/2 Packet of Onion Soup Mix
1/2 Tomato -Cubed
Chicken Breasts
( I add flour towards the end to thicken Tangy Gravy)

I was in a hurry so I used Defrosted , Filleted Chicken breast on high for 2 hours (Adjust for thickness)


Perfect Potatos In the Oven
Boil quarters, Put on ligtly oiled cookie sheet
Grate Butter on top of them
Cook Until Golden Brown
I add Grated Cheese in Final Minutes

Sweet Corn on the side
Can of corn cooked with butter & a dash Brown Sugar

I did this whole dinner on a whim and i am so glad i experimented... it was Perfect.. Very unusual Flavor so its was a welcomed change , Plus it had a good amount of fresh colorful ingredients!
In the excitement of the smells and anticipation I forgot to get a picture before we ate , and well lets just say the aftermath of the crock pot looked less than appetizing .. needless to say there are no leftovers & We will be making this again!

Your enchilada casserole is very good! Just took it out of the oven and served up some for my lunch. I baked this in a glass oblong casserole dish, at 325 degrees F for 50 minutes, so I could cut portions to fit freezer containers. My sons are getting "mom's meals" as part of their Christmas gift from me.

The changes I made: left out the peppers and ripe olives as sons are not fans, made my own enchilada sauce, added a small can of diced green chiles to the sauce after simmering the sauce with the browned turkey, used extra sharp and mild cheddar mixed with some pepper jack cheese. I do like the consistency of the corn tortillas after baking and softening somewhat.

This will be my go-to enchilada casserole from now on! Thanks very much for the recipe!

Lemon & Pepper Chicken with Cashews & Rice
In the Crock Pot:
Chicken Breast
1/2 can of cream of mushroom
1/8 tomato- diced
1/8 grated onion
1/8 grated Green Bell Pepper
Cashews
Carrots
a few dashes of Lemon & Pepper Marinade

Cooked on High for 3 hours
Served with Rice

(i used liptons easy sides chicken &Broccoli Rice)

This was absolutely Delicious!
 
I make a really good pot roast in my crock pot.

INGREDIENTS:

3 TBS canola oil
1 clove garlic diced very fine or put through garlic press
2 to 3 lb beef chuck pot roast
1 TBS kosher salt
Freshly ground black pepper to taste
3 cups beef stock
1 sprig rosemary
1 sprig thyme
Small yellow onion diced
Dash of Worcestershire sauce
4 carrots cut into chunks
6 small red potatoes cut in half
3 boiling onions peeled

DIRECTIONS:

Heat oil in dutch oven and cook garlic until fragrant but not browned. Depending on your fondness for garlic you can either remove the cooked garlic now or leave it in. I left in about half of a huge clove. I didn't want the garlic to overwhelm the dish. While the pot is still hot, season both sides of the roast with salt and pepper and brown on both sides. Remove meat from pot and spoon out most of the oil. Return meat to pot and add beef stock, rosemary, thyme, diced onion, and Worchestershire sauce. Put lid on dutch oven and place in pre-heated 350 degree oven. At the end of one hour or if the scent of rosemary fills the house you may remove it. Leave the thyme. Continue cooking the roast with the lid on for a total of three hours. While the roast is cooking, peel carrots and onions, and cut potatoes in half. Place vegetables in a bowl of cold water until ready to use.
After the roast has cooked for three hours, add the vegetables and continue cooking until potatoes and carrots are fork-tender. Remove roast and vegetables to serving dish and pour liquid from the pot on top. Serve immediately with hot bread and butter.
 
First Time i Ever tried Layering my Crock!

Honey Mustard Chicken with Corn on the cob and parmesan potatoes

From the bottom up I added:
Chicken Breast Fillets
Honey Mustard-about a cup or two- enough to cover chicken
Chopped onions
grated bell peppers
2 Tablespoons of "Carribean jerk" marinade
Frozen Corn on the Cob
potatos chunks (pre boiled)
On top i sprinkle parmesan
& fling on Sour cream with a spoon

I cooked on High for 3 hours without stirring.
great taste and not soupy at all. Easy & Quick

Put a cup of rice in the crock. Add 1-1/2 cups of water, a packet of onion soup mix. Mix well. Set chicken pieces on top. Spread a can of whole cranberry sauce on top of the chicken and cook on low for 6 to 8 hours.

Or

Put a cup of rice in the crock with 1-1/2 cups water. Add chicken pieces.

Mix together a can of whole berry cranberry sauce, a bottle of french dressing and a packet of onion soup mix. Pour over chicken and cook on low 6 to 8 hours.

I am so trying this! Thanks, I had one more day where I needed a crock pot recipe and this should work perfectly, it sounds delicious.
 
JP, don't know if anyone else posted this recipe (too lazy to go thru all the pages...lol) but here is a great recipe for clam chowder!


QUICK AND EASY CLAM CHOWDER , serves 10

1 (10.75 oz.) can of condensed cream of celery soup

1 (10.75 oz.) can of condensed cream of potato soup

1 (10.75 oz.) can of New England clam chowder, I use Progresso

2 (6.5 oz.) cans minced clams

1 quart half-and-half

1 pint heavy whipping cream

Directions:

Mix cream of celery soup, cream of potato soup, clam chowder, 1 can undrained clams and 1 can drained clams, half-and-half and whipping cream into a slow cooker.

Cover and cook on low for 6-8 hours.

Can double this recipe, if you want. Maybe even triple it if you have a 7 qt. crockpot.

Like more clams? Add another can or two. More potatoes? Cut up a few into cubes and throw them in with all the other ingredients.

I have a recipe for crock pot lasagna around here somewhere. I got a new crock pot for xmas cause I broke mine a few days before xmas on the edge of my metal kitchen sink when washing it. :/ it was old anyways and I have been thinking of getting a new one soon.
