I agree that you probably have a tom and a hen.
You also asked how old they were. The tom's caruncles and waddle are still relatively undeveloped, and the snood has not started to elongate. Some baselines that I have observed are losing the head feathers at about 6 weeks, and the snood starts to sprout on the toms around 10 weeks. Also, at about 10 weeks, the waddles seem to become large and flappy and the caruncles start to change more rapidly. I'd guess that yours are about 9 weeks, maybe 8 (I just realized how small they still were when I compared them to the guineas).
