It’s good that you guys might try it out. It’s only fair for me to tell you about a mistake I made once. Do not mistake the citric acid for salt. I accidentally mixed up the two once. The cheese was gross.

If you follow the recipe, the cheese will be so good, it probably won’t last for a day.

Every time I make cheese, I feel like these two in this picture.

@sunflour I think I'm going to try the metal pan. I've used glass before and wasn't thrilled about the crust, but then again I've learned that I should turn out the finished bread fairly soon which answered some questions lol.

@N F C thank you, I've been reading on their site quite a bit over the last couple of days. I already like their flour, love their site for sure!

I'm looking forward to the day by myself tomorrow. I've promised hubs I'll make him oatmeal cookies too. With apricots and shredded coconut

Yes, take the bread out of the pan right away and put it on a cooling rack.

Use a probe thermometer to check for doneness too. I put the probe into a loaf after 20 minutes of baking. Bread is cooked when the temperature reaches 195-205 degrees F

Yum, those oatmeal cookies with apricots & coconut sound terrific!
