I wanted to experiment with a coconut cake, but the kids just accidentally tore the tops off a bunch of ripe bananas, so maybe banana cake instead?

DW just made me a four ingredient recipe for Almond Joy Cookies. I'll have to get the recipe from her as they were awesome. Kind of ugly, but that's ok...
@N F C have no idea what we're doing for tomorrow... I've been banned from the kitchen and DS and DIL have the stick. I think I spied a ham in the fridge, but was chased off after peeking. My big deal for tomorrow is put hardware cloth over the windows on the greenhouse and put the turkey hens back in the convent (who would have thunk that they'd figure out that was a good way out?). Kick all the other chickens out and bring in the RIW breeders. Since I can't seem to keep chickens in their assigned cells, I'll put turkey girls in one, chickens in the other (don't care where they end up) and setup the hotel for the turkeys. In a couple weeks I'll start bringing in the Toms to do their jobs. And I need to figure out how to sell my eggs.... I'm getting buried in eggs right now.
1 14oz bag of sweetened coconut flakes,.
2 Cups semi-sweet chocolate chips
2/3 Cups Chopped lightly salted almonds
1 14 oz can of sweetened condensed milk
Preheat oven to 325*F
Line a large baking sheet with parchment paper
In a large bowl mix all the ingredients until thoroughly mixed,
Scoop out about an once of mix onto the parchment.
Wet your figures to shape the mix..
Bake for 12-14 minutes until the coconut starts to brown,
Cool on a cookie rack.
Let the cookies set on the sheet for 5-10 minutes before moving to the wrack. Ugly but good....
They aren't pretty, but soooo good. I took them for lunch and gave some to the guys who never seem to have lunch... They were amazed. Although I think you'll find this cute.... One kid commented that I have boiled eggs every day... My response was yes, I grow them... He was perplexed... Others explained it and he finally came around and was: so you have chickens? Yes.. and they lay eggs... He is young but was really confused. Hard boiled eggs come from chickens...
