Any Home Bakers Here?

Well, I finally did the head to head comparison to figure out why pro bakers prefer duck eggs to chicken eggs. In the end, the taste and texture is identical... but you can almost get two layers out of the batter for one. The math seems complicated and will require experimentation, but I was amazed at the volume difference between the two...

@BullChick ducks who live on a pond and eat fish all day produce fishy tasting eggs, but ducks raised in a pasture who eat bugs and such, produce eggs that taste just like the chickens.

Interesting about the volume difference Bob!

Guess some day I'll have to get ducks too...for scientific purposes only of course, to compare the egg differences. Hmm, wonder if I could qualify for some sort of research grant to cover the cost :cool:

In all fairness you will also have to try turkey eggs. They really are great for baking and custards.

If you say so. :oops: I don’t really like them. Even when I’m convinced it’s a good thing to eat.
In all fairness you will also have to try turkey eggs also. They really are great for baking and custards.
I considered trying turkey eggs, but didn’t while I had turkeys. Someday I will.
 
Made my gluten free muffins. I used the recipe my friend picked out. I did not try them but they smelled good while baking. They are blueberry with orange juice/zest, vanilla, eggs, honey, coconut milk and almond flour and baking soda. She’s bringing them to her niece’s bridal shower tomorrow.
