Well, I finally did the head to head comparison to figure out why pro bakers prefer duck eggs to chicken eggs. In the end, the taste and texture is identical... but you can almost get two layers out of the batter for one. The math seems complicated and will require experimentation, but I was amazed at the volume difference between the two...
