You'll love this ron.... I went to the catfish farm restaurant for catfish. It was horrible... Went to the local restaurant in town that just opened up and it was wonderful. Who knew?

Made this new cookie recipe a couple days ago. Guess DH liked them, they're gone (I'll admit, I had a couple :p)!

Butter Pecan Cookies

For the buttered pecans:
1 1/2 Cup pecan pieces, finely chopped
1 1/2 Tab unsalted butter

For the cookie dough:
2 1/4 Cups AP flour
2 1/2 Tab cornstarch
1 tsp salt
1 tsp ground cinnamon
1 tsp baking soda
2 sticks (8 oz) unsalted butter, melted until browned (step #3 below)
1 Cup brown sugar, packed
1/2 Cup sugar
2 tsp vanilla extract
2 eggs, room temperature
pecan halves, for decorating

1. Melt butter in a large skillet over medium heat. Add in the chopped pecans and cook, stirring occasionally, for 4-5 minutes, or until lightly toasted. Set aside until needed.

2. In a large bowl, combine flour, cornstarch, salt, cinnamon, baking soda; whisk to combine and set aside.

3. Melt butter in a skillet over medium heat; continue cooking, stirring occasionally until golden brown. Allow to cool a bit so when you add the eggs, you don't cook them! Remove pan from heat and pour butter into a large heatproof mixing bowl. Add in both sugars and mix well. Add in vanilla. Beat in eggs, one at a time, beating until eggs are just combined.

4. Fold in dry ingredients, stirring just until combined. Fold in the buttered pecans.

5. Preheat oven to 375*. On a parchment paper lined baking sheet, place tablespoon sized scooped balls of dough. Lightly flatten and press a pecan half on top. Bake in the preheated oven 8-9 minutes. Allow cookies to cool on the pan for 15 minutes, then carefully transfer to a cooling rack.

Well, somebody decided to escape from her run and go out to eat for breakfast this morning.

When I went out to take care of the chickens this morning, I noticed that Sophie, the rabbit, escaped. She was in the front yard eating grass. I went out, looked at her, and said, "Sophie, what are you doing?"

She's got quite the personality.

Back on the baking subject, I am currently looking for more Goose recipes, mainly because I'm going out again tomorrow and there's a good chance I might get more geese.
