Baking story.

I have to say this, the first Goose I cooked did not taste very good. I did not like it. I thought all geese tasted that way.

Yesterday while processing the geese, I read on the internet that geese have higher fat content than chicken. I also read you had the drain out the fat, to have a good flavor from the goose. So, I decided to try Goose again and try cooking it properly this time. Yesterday, I got two geese, and my partner got four.

I just got the pulled goose out of the crock pot, and I decided to try it to see if there was a difference from last time, when I cooked it incorrectly, and this time, when I cooked it correctly.

Even my mother, who does not like Game Meats, said that this is very good. Big difference from last time. I liked it also very much. I'm a big fan of goose now.

Jared, I think you either love or hate goose fat, or fat of any kind of animal. The matzo ball soup I want to try uses goose fat to make the balls and the goose to make the stock. But then again, I love goose liver, gizzard, heart and fat. People's tastes vary quite a bit.

R2 doesn't like tallow, I get it... But truthfully, I haven't found an animal fat (other than deer) that I didn't like. @R2elk how were you with McDonald fries 10 or 20 years ago? Just curious.

Some in my Family do not like lamb fat. I like it but prefer a bit of rosemary to help with the flavor
 
Me either grew up on Beef had lamb from a neighbor in trade they got the better deal did not do that again mostly we had no geese turkeys and chickens and beef. Pigs so Pork Ma made good sausage never imparted that to me but was without sage no one cared for the sage I find it easier to buy it
 
You may or may not believe this but it has probably been over 30 years since I have had McDonald's fries. I definitely have not had any in the last 20 years.
Now I want a Filet of fish with fries!

Well that works. What got them in trouble with India was how the fries were prepared. The potatoes were peeled and cut and put in beef stock to keep them fresh. Then they got their first fry in tallow and then frozen. The fat that the company provided to their restaurants was tallow. My cousin was involved in the project to keep the flavor and change to process to canola oil and non-beef products.
