Look for recipes that use masa harina. That is corn flour. tortillas do use it, and it is a thickener in some recipes.

Try adding about a third of it into muffin and cake recipes. Bread needs 50% wheat flour to raise--needs the stretchy gluten.
Yes, I did see that some tortillas use flour. But not much else. So I didn’t miss any real use for flour.
Is this for a basket you are making up for someone? Or is this a basket meant for you?
Me. I don’t have materialistic wants. It makes my Christmas wishlist difficult to come up with. Tools, dishes, towels and bedding have all been fulfilled. Now I need little things I won’t buy for myself. Dough scraper, pastry cutter and various flours I don’t keep on hand. Plus whatever else they find. Olive oil, coconut flakes and milk, cookie cutters, etc.

That would be a fun basket (to either make up or to get)!

Hello,

@R2elk, I have a friend in Coeur D' Alene who drew a moose tag and got a moose. He made good sausage out of it. He has the same opinion, using pork suet.

All this talk about making sausage is making me want to try to make sausage myself! Is it easy to do?

Jared
If you have a grinder, it is just a matter of having a good recipe and mixing the ingredients well. Of course if you want link sausage, you also need a stuffer and the casings to stuff the prepared meat into.

Made this new cookie recipe a couple days ago. Guess DH liked them, they're gone (I'll admit, I had a couple :p)!

Butter Pecan Cookies.JPG

Butter Pecan Cookies

For the buttered pecans:
1 1/2 Cup pecan pieces, finely chopped
1 1/2 Tab unsalted butter

For the cookie dough:
2 1/4 Cups AP flour
2 1/2 Tab cornstarch
1 tsp salt
1 tsp ground cinnamon
1 tsp baking soda
2 sticks (8 oz) unsalted butter, melted until browned (step #3 below)
1 Cup brown sugar, packed
1/2 Cup sugar
2 tsp vanilla extract
2 eggs, room temperature
pecan halves, for decorating

1. Melt butter in a large skillet over medium heat. Add in the chopped pecans and cook, stirring occasionally, for 4-5 minutes, or until lightly toasted. Set aside until needed.

2. In a large bowl, combine flour, cornstarch, salt, cinnamon, baking soda; whisk to combine and set aside.

3. Melt butter in a skillet over medium heat; continue cooking, stirring occasionally until golden brown. Allow to cool a bit so when you add the eggs, you don't cook them! Remove pan from heat and pour butter into a large heatproof mixing bowl. Add in both sugars and mix well. Add in vanilla. Beat in eggs, one at a time, beating until eggs are just combined.

4. Fold in dry ingredients, stirring just until combined. Fold in the buttered pecans.

5. Preheat oven to 375*. On a parchment paper lined baking sheet, place tablespoon sized scooped balls of dough. Lightly flatten and press a pecan half on top. Bake in the preheated oven 8-9 minutes. Allow cookies to cool on the pan for 15 minutes, then carefully transfer to a cooling rack.

Those cookies look good, Dh would probably love them!
I don't particluarly like nuts, so I'll pass. I will pick the large chunks of walnut out of the toll house cookies and feed them to the dog. I usually make 1 dozen nut free cookies for me, then add the recipe amount of chopped walnuts to what is left of the dough and bake them up for DH. :) both of us are happy that way - the dog, not so much
