It's fun when you can tie together some of the things you like to do the best.

We do not get to cook Goose very often anymore!Hello,
@ronott1, maybe. Last time I cooked a whole Goose, did not turn out right. I'm going to try to make some pulled Goose sandwiches with a recipe I found, and if I like it, I'll try my hand at cooking a whole Goose again for Thanksgiving. I'll have to take down another, though. We will see what happens.
Jared
A neighbor came back from Canada with lots of geese. His plan is to make goose sausage. We do not get to cook Goose very often anymore!

If I can ever find my sausage recipe, I used to be able to make antelope sausage that you could not tell the difference from good pork sausage.Best that would be good! Geese are pretty fatty, right? So guessing that would make a good breakfast or maybe Italian type sausage.
Did you add beef or other fat or suet to it?If I can ever find my sausage recipe, I used to be able to make antelope sausage that you could not tell the difference from good pork sausage.
It has to be pork fat.Did you add beef or other fat or suet to it?
