Any Home Bakers Here?

It has to be pork fat.
I have added beef fat to pork sausage. It was very good!

Do you save up the pork fat or buy it? I made sausage two weekends ago from a whole pork butt. Part of it was used in Pozole and the rest, about three pounds, was ground up into sausage

I would normally buy the pork fat at the cooler where I would leave the game animal hang for a week. If you ask, some meat departments will save pork fat for you.

You definitely have different taste buds than I have. I find beef fat (suet) vile and disgusting.

Ron (and everyone else of course), I am trying to decide what I should ask for in a baking basket. I can’t find many recipes that need cornflour. Pretty much just cornmeal. Am I missing something?
Cornmeal for under the pizza crust and English muffins, cornmeal for cornbread and muffins. Cornmeal for tortillas.

Look for recipes that use masa harina. That is corn flour. tortillas do use it, and it is a thickener in some recipes.

Try adding about a third of it into muffin and cake recipes. Bread needs 50% wheat flour to raise--needs the stretchy gluten.

Is this for a basket you are making up for someone? Or is this a basket meant for you?

@R2elk, I have a friend in Coeur D' Alene who drew a moose tag and got a moose. He made good sausage out of it. He has the same opinion, using pork suet.

All this talk about making sausage is making me want to try to make sausage myself! Is it easy to do?

Sausage is good! Spanish Chorizo is very good too
