The heat issue is true for most non stick pans. I use cast iron or high carbon stainless steal for high heat searing.I was watching a cooking show and they were discussing this type of fry pan - the new non-stick ones that don't use teflon. The biggest problem with them is they can't handle HIGH heat - so keep the temps on those below 375 degrees or they can micro-fracture the coating and will no longer be non-stick.
