I found a new cake recipe I want to try out tomorrow...Coconut! This recipe was from a Food Network magazine and involves cream of coconut (you find it in the drink mixers section).

I made a banana cake today. I baked it at 275* for 1-1/4 hours then your supposed to toss it in the freezer for 45 minutes...I didn’t. I’m going to frost it tomorrow. Hubby’s cousin made it the correct way. I want to see if it makes a difference not throwing it in the freezer.

Hmmmm....Temperature has to get higher than that to get soda or baking powder to activate.

The cake used eggs to leven it?

It’s a heavy cake. It has 3 eggs.

That’s what I thought. Nothing like heating up your freezer food!
