My rhubarb is finally growing good. I will be cutting a bunch and canning pints of Sunshine Rhubarb Juice. It is really refreshing on a hot summer day and a nice summer memory during winter.
Not a rhubarb pie person. :sick
I need to go grocery shopping to pick up a few supplies. Once I have the missing items, I will start a batch of rhubarb wine.

What goes into the Sunshine Rhubarb juice?
 
I can't remember exactly, I believe it has oranges, lemons, rhubarb,and sugar.
I looked it up:

12 C sliced rhubarb (about inch long slices)
4 C water
1 1/2 C sugar
grated zest and juice of 1 lemon
grated zest and juice of 1 orange

1. In a large stainless steel saucepan, combine rhubarb and water, lemon zest, and orange zest. Bring to a boil over medium heat, stirring constantly. Reduce heat, cover and boil gently until rhubarb is soft, about 10 minutes. Remove from heat and add lemon juice and orange juice.
2. Transfer to a dampened jelly bag or strainer lined with several layers of cheese cloth set over a deep bowl. Let drip for at least 2 hours.
3. Combine rhubarb juice and sugar and bring back to 190 degrees over heat to dissolve sugar.
4. Prepare hot water bath canner and lids.

Process pints for 10 minutes. Then allow them to cool for 5 minutes before pulling them out of the canner

My recipe uses the slow-cooker - everything but sugar in the crock and cook it for 6 hours, strain into pot and add sugar, bring to a boil and then BWB can it. My mom drinks it straight out of the mason jar,as is - I mix it half and half with white soda to carbonate it. It is good with a little vodka also.

I've never heard of that but it sounds good!
 
I have 4 rhubarb plants at this house - I picked a whole bag of it for my mom the first year we were here. She only wanted enough to make ONE pie. I don't like to waste anything so I had to figure out something to do with it since i had already picked it.
Lots of interesting recipes in the Ball Canning book that I would like to try.

My rhubarb was messed up for several years after I hired a landscaper. I got a few decent stalks last year, and finally got a respectable harvest this year. Considering momma rabbit was in there (though her fertilizer is appreciated), I was surprised to get four cups. I hope to get more next year.

I plan on trying rhubarb turnovers. I was just looking up a few recipes since everyone is talking about it, and the cheesecake sounds interesting too. I’m low on cream cheese for that.
I have a rhubarb strawberry pie recipe somewhere. I have tried straight rhubarb pie, and didn’t care for it. However, my strawberry plants I bought this year were dead upon opening the box. The rhubarb is in the freezer right now.
