Well I finally Tried Mom's mushroom soup chicken recipe on a year old rooster. And it worked well. Was trying to find something that worked well with old birds other than the classic chicken and dumplings.
Cut up the rooster, give it a rub of olive oil and seasonings (I used my turkey rub), brown it and toss it in the pressure cooker. Add a can of cream of mushroom soup, a can of cream of celery soup a can of mushrooms and a half cup of water. Stir best you can and cook 30 minutes under pressure. Serve over buttered egg noodles and peas. The meat was extremely flavorful and tender and the gravy was divine.
