I said it before, goose is pretty good when you cook it properly. I'm planning on making some Goose Burgers as well as some barbecue pulled Goose sandwiches some time.

Somewhere I have a recipe for Matzo Ball Soup where the balls are made from goose fat and the stock and meat are goose. One day I'll get to try it.
