Jareds roasted Canada Goose recipe:

Ingredients:

1 whole Canada Goose, plucked and cleaned

Directions:

Thaw bird 24 to 48 hours before serving

Trim off excess fat without removing skin. Save for schmaltz if desired.

Poke holes in goose skin, on the back, thigh, and breast. Puncture skin and fat, but not meat.

Set on a rack with a tray underneath to catch fat under skin during cooking

Preheat the oven to 355. ( not a typo.)

Calculate cooking time. Cooking time is 30 minutes per kg. Math time! A 6.2 pound goose needs to cook for 1 hour 46 minutes 5.12 seconds.

Cook the goose breast side up in the oven for calculated time. Internal temp should be 165 degrees Fahrenheit.

Note: during cooking fat will drip out onto the pan. Save for schmaltz if desired.
