That's for sure! I told Igor he needs to expand his horizons and step back from the cookies. He almost cried.

I thought the reason for stepping back from the cookies was because of his expanding horizons.

I weighed the dough before and after I divided so the loaves are more consistent in size. Still working on getting a consistent shape and I might leave the next batch to rise a little longer the second time.

60-70 dozen is less?

Wow, that sounds like a lot of work! Looking forward to seeing pictures!

I don't know if I answered this earlier. Just coming in here for quick breaks and jumping up when a bell rings. Yes, 60-70 dozen is much less. Normally I would make well over 100 dozen, but my list shrank a little this year.

Not actually baking today. Just mixing and rolling some that can be sliced and baked later. First pictures tomorrow!

How do pork cutlets get made in a car? Are you cooking them on the engine block or doing it as a slow cooker on the radiator?
