I'm looking for sweet potato suggestions. I'm being buried by them. We've dug up about 1/3 of ours and that is plenty but some kind-hearted neighbor just dropped off 10-15 pounds more they didn't want and of course DH took them. Now what?

I figured I could boil, mash & freeze some of them but what else?

IMO baked are the best, but make sure you age them first.

Place as many as you can in windows or on a screened in porch to age them some - when they look a little crinkled, they are ready. If you have room to store them, they will keep for months and months. I have stored in refrigeration and they get even sweeter. The secret to great baked sweet potatoes is the cooking temperature - wash and rub in crisco, place on baking pan and bake one hour at 350 degrees. They turn out so much sweeter that way you don't need anything but a little butter to serve.

ok so I haven't found the muffin recipe (might have lost the book/might have seen book in store cant remember) but I have found a lot of other sweet potato recipes I didn't know I had. first one being sweet potato pie and maple praline sauce, then there is sweet potato biscuits, sweet potato coffee cake with caramel glaze, sweet potato corn bread, sweet potato short cake, sweet potato pound cake, rum glazed sweet potato cakes, sweet potato tartlets, sweet potato spoon bread, honey and pineapple sweet potato(looks like a side dish from the picture). I had no Ideal I had so many sweet potato recipes lol I might have to start buying some sweet potatoes more often. Root veggies I can not grow thanks to all the clay in our soil I tried onions and carrots one year and they didn't get very big at all. so unless I use a pot it wont work.

Wow, you do have a lot of sweet potato recipes! Some of those sound really good.

@sunflour I bake sweet potatoes like you do only I put some coarse Kosher salt on the skin before baking (we like to eat the skins too). Butter a little pepper and it's good to go. Oh and we do age our home grown ones before eating...about 2 weeks has worked for us so far. The ones we had tonight were really good, deep orange inside and (of course) naturally sweet.

Lol yeah i had no clue i had that many. I still confused over the muffin recipe i could have sworn i had one... Its really annoying me that i dont know where it is.

We got into veggie gardening in search of a good sweet potato. And cured those for 14 days, but never quite as sweet as those we place in a window and wait for longer.

I eat Irish/Idaho skins, but never tried the sweet potato skins, will have to when my current "window crop" is ready.

I am jealous of yalls soil.... I am seriously depressed about not being able to grow certian vegies.

I'm jealous of anyone who can grow carrots, even failed in pots And this year is our worst for everything, too hot starting in the spring. Now too late to get a fall crop in, rain delays

But you should be able to get most summer crops to grow there, have you explored the gardening forums?

Lol honestly afraid to lol. right now i have pumkin, cumcumber, yellow squash, zucchini, sweet peas, carrots, broccoli, cauliflower, avocado, pineapple, apple, sage, basil, rosemary, tyme, oregano, peppermint, spearmint, jalopeno, bell pepper, eggplant and poblano pepper plants and one lectuce, pecan. I think thats all my plants i have right now oh and a lemon tree. I just planted tree more apple seed and several lemon seeds and an avocado seed and a plum seed we'll se what comes out i have a small green house they can stay in during the winter i am hoping the trees sprout. My dad gets mad when he comes up because how much i can grow. I dont do anything special i just reliy on God's help and design. I cant wait to plant all my plants in my garden right now i have lemon grass, the egg plant and the pepper plants in the garden once i am done deweeding them i plant and once they big enough for the chickens not to destory as well.
