Any Home Bakers Here?

My Youngest Daughter wanted Cheese cake, so we made one last night. It looks very nice!



Cheese Pie

Crust
18 graham crackers tolled to crumbs(1½ C any cookie) (35-40 nilla wafers)
¼ C sugar
5 tbs melted butter or Margarine

Filling
2(8oz) Cream Cheese
2 eggs
½ C sugar
1 tsp vanilla
Pinch salt

Preheat oven to 375 F. Mix crust ingredients and pat firmly into bottom an 1/3 of the way up the sides of a 9” spring form pan. Beat filling ingredients with a rotary beater or electric mixer until satiny and pour into crust. Bake 25 min. Cool in pan to room temperature, and then cover with foil and chill 10-12 hours before serving. Cut into slim wedges.

Note: It is very important to only cook for 25 minutes. The filling sets up after 10 to 12 hours. It will not be set in the oven. The biggest mistake bakers make is over cooking cheese cakes!

Easy Raspberry Sauce for Fillings/Frostings
Ingredients

  • 12 oz fresh raspberries
  • 1/2 cup water
  • 3/4 cup granulated sugar
  • 2 Tablespoons cornstarch
Instructions
1. Make a cornstarch slurry by combine the water into the cornstarch and whisk to incorporate.

  1. 2. Next add your sugar to the slurry and stir
  2. 3. Combine fresh raspberries in pan with your slurry.
  3. 4. Mash your berries as you stir
  4. 5. Continue to stir (and mash) and let come to a full boil over medium high heat.
  5. 6. Once thick, strain using a fine mesh strainer to remove the seeds.
  6. 7. Let cool completely (refrigerate if necessary) before adding to whipped cream or buttercream

Yes she does!

She is taking a culinary arts class this semester and said cooking with me was much better.(likely because I do not make her keep notes and fill out a chart...).

Well, the peaches were a HUGE disappointment.

I don't know what sample that guy gave us but it certainly wasn't like any of the peaches we bought from him. They looked fine on the outside and just the right ripeness for a pie. I washed them and cut into them and EVERY last one of them was brown mush on the inside. That's $18 I'll never get back. And worst of all, no peach pie around here

The good news from the kitchen today is I baked up 5 lbs. of sweet potatoes, mashed them (nothing added) and they are now in the freezer ready for whatever. I bagged them up 2 cups each bag, hoping that's a good amount for what they might get used for.

Oh, and DH dug up the remaining sweet potatoes still in the garden so those are drying.

Yay, more potatoes

 
An update on the starter project:

I'm going to start the 2x p/day feeding. It has definitely changed appearance since first beginning it. Things are bubbling, rising and very busy in that jar.
