Any Home Bakers Here?

The tip for biscuits was to use low gluten\protein flour. Soft white wheat flour is harder to fine in the northern part of the US but is easier to find in the South.
Cake flour is readily available though. I used it 1/2 and 1/2 with ap flour on my second batch and they were even better!
 
Honestly I do not know what these where bought for but we have 8 in the kitchen
3 1/2 inches I use to make english muffins..

Hey, @ronott1 , wondering if you could help me here ...

My DH gave me a grain mill for xmas. I found a site where I can buy soft white wheat, hard white wheat, and hard red wheat. From your earlier post and what I gleaned from my readings, the soft white wheat is low gluten/protein. Does that mean the hard white wheat could be considered "bread flour"? I'm holding off buying any 'til I can get this figured out. Another question --> Is AP flour a mix of the two?
