That was easier than I thought, but it turns out I need a new tube either way.
 
@BReeder! or anyone else that likes to mix dough one day and bake later, this is a good book for that:

All of his recipes are made like that and he explains why, along with a lot of other information about bread baking and a big assortment of recipes. This book was really helpful to me when I first started baking bread.
That's the class I took. I still refer back to it regularly.
 
You got to take one of Reinhart's classes Bob? That would be so cool!
I took it through Craftsy who is now owned by someone else. We had regular assignments and he judged our bread. I was out there a few weeks ago looking for something and asked a question and he still answers. It's been years since I took that course. Do a google search on Artisan Bread Making Reinhart and it will come up. You get a bunch of recipes and instructions for the course material and then videos of him teaching the class. Then there's a student chat box where students and he answers questions. I think I paid like $30 for the class.
