Any Home Bakers Here?

I am almost decided The Correct Procedure to make a TRUE SOURDOUGH Loaf is NOT for me. Either 2 days for a round small loaf...
or one day with "stretch turn fold", with a 30 min rest and then do 4
of the same waiting 30 minutes between each stretch turn fold. Then
for the final shaping and rise AGAIN and baking. You can do it one day
taking the WHOLE DAY or mix and then stretch and fold next day and
bake. This seems TOO LONG of a time mixing, handling the dough
for that small round crusty loaf. And the final result: a slice fill of HOLES
making it almost impossible to make a sandwich. Is there an easier way?
The King Arthur recipe is overnight and about three hours in morning. It has plenty of sourdough flavor to it.
 
That is a nice mistake!

When a cake fails we will eat the results. I had one cake fall apart out of the pan. We called it chocolate mistake cake, gathered around is and ate the crumbles! Fun times!

We have crafty people who rushed to Walmart and got pecan pieces and flowers. We ditched the bottom layer and just put the top one on a plate. With minutes to spare we decorated the top layer and entered that. We won 1st place and still laugh about that drama

I remember once during hunting season when I took a Canada Goose. It was a decent 10 lb Goose empty weight. I cooked it and brought it into work for a feast. Shortly after, I had to leave. When I came back to start my shift, the entire Goose was gone.
