Any Home Bakers Here?

@bruceha2000 I would be willing to mail you some! the Mennonite store has at least 4 different Whole wheat flours to choose from. And 2 of those I can buy in a 50 lb bag...

Are you anywhere near one of the two Mennonite communities in Vermont? Maybe they have a country store where you can find some whole wheat flour.
 
Just made bread today. A small round loaf that we devoured warm with butter. And a large loaf in hope that it lasts a bit longer. I think it had two hours rise at the most on both rises. I wonder if I could make a sourdough without adding any dry yeast.

You might be able to get bread to rise with just sourdough. It depends on how old the starter is.
 
Maybe a month old. It's very bubbly and escapes out of the jar when I feed it. I've had to buy a bigger jar for it to live in.
I would give it a try. It might take longer between rises so plan for a longer time to get the dough into the oven
