I got an email from King Arthur about a week ago, and it tells you how to survive with little to no yeast. Warmer and longer proofing can bake up the bread with (I believe it was) 1/4 tsp.

Yes it was in a magazine as a weekend project. Start the sponge Friday night, mix in rest of stuff Saturday, let it rise then shape and put in fridge Saturday night to bake on Sunday. I think I posted it here a while ago.You would need really good planning for that one!
I found a recipe for Cream Cheese Snickerdoodles. Wow! They were delicious and only lasted the day! So Yummy!
