Looks perfect Aria!! Definitely taller than what mine have been. I think I have 1 more 20 minute fold to go based on the last one. Then the 1 hr rest before final fold then half hour rise then shape then rise for 1-2 hours before baking.
That is the "problem" with this bread and others like it. It isn't the actual hands on time that makes it difficult, it is the fact that you can't go off and do other stuff (like blocking your logs into 16" pieces ready for the splitter) in the meantime. Anything else you need to do has to be really short term.
You are too kind. You are right with the TIME procedure. I have a
recipe Tartine Country Loaf that is ROUND. In fact it is a LARGE one
and it makes two Round Loaves. While one is baking...the other rests
in the Refrigerator. Planning to try this one next. And it has Whole Wheat and White Bread Flour. And not as many lift-stretch-folds. Thanks again for your comment. Aria

BAKED ROUND....again. Not as much time spent. Went about my business and set the timer and I was there in no time. Now depending

Good News, it looks like I found somebody who might be able to take me for fall bear in august-october. I will know for sure in 2 weeks.
Also, I'm doing a deer hunt this October.
Then, its duck and goose season.
If I'm successful, I'm going to have a LOT of meat. May need to buy a new freezer.
