Any Home Bakers Here?

The wetness will often depend on how thick the starter is. Add a bit more flour to the english muffin recipe to get it be be more like what you want.
That’s what I’ve been doing most of the time. I followed the recipe for the English muffins and they’re really really soft. Mangled them up bad getting them off the sheet into the skillet! Good thing they’re tasty either way though!
 
My Bread has been out of the oven. WAITING ...my Camera is charging.
Looks OK. But as I mentioned many times....NOT MY FAVORITE Breads.
Mixing it the night before is GREAT and I did not mind the lift-stretch-folds. I went about my duties....set the timer...and did a fold. Before I
knew it I had done All the Folds and it was ready for Final Shape.

I was never a huge peanut butter fan, I would eat it but definitely not my favorite. Then I got really poor and ate peanut butter morning, noon and night because that is all I had in the cupboard. To be honest, I had a jar of mom's strawberry jam in the fridge to round out the PB&J sandwiches when I had brat buns (free as leftovers from club fundraiser).
Somehow, 20 years later, DH has gotten me back to eating PB&J sandwiches. I had 2 on Saturday in fact. 1 with Smucker's Strawberry Jam and the other with seedless Red Raspberry Preserves. Both were excellent. Probably done eating anything with peanut butter for a couple months.
