Any Home Bakers Here?

I appreciate all that advice, but you missed what I was asking. I picked up a beef brisket at the store. I want to make something with it besides corned beef because I might get a deer this season.

Do you have a smoker Jared? If not, look online for how to smoke meat in the oven...smoked brisket is good stuff!
 
We smoke our beef brisket also. If you have a Weber charcoal grill, that will work nicely for a smoker.. Most grills can be used as a smoker, it just isn't as easy on some as on others.

Otherwis, give it a good dry seasoning rub, place it on a rack in a pan with water in the bottom. Seal it tightly with Aluminum foil and bake in a 300 degree oven for hours. (not sure of the time , it depends on the size of the brisket). Remove from oven and let stand for 15 minutes. remove to a cutting board and slice against the grain into thin pieces. Serve with BBQ sauce or just the pan drippings.
Some people say a 300 degree oven is not a safe temp, so you can go up to 325 if you want. But it needs to be low and slow.
 
I have used a Weber kettle as a smoker, for capon and venison. It took a lot of fussing around but the results were absolutely delicious. If I remember correctly the recipe I had said to cold smoke for a few hours then refrigerate for a day or two and finish roasting the day you want to serve it. It may have been a Sunset Magazine recipe. I think the process would work with brisket as well. Especially if you don’t want to spend the whole day tending coals.

As long as the internal temperature goes high enough, 300F would be fine
 
Baked Sourdough Bread
1/2 cup SDS
2 tablespoons honey
1 1/2 teaspoon sea salt
2 tablespoons extra virgin olive oil
1 1/4 cups warm water
1 cup whole wheat flour
2 1/2 cups Bread Flour
1/4 cup vital wheat gluten
1 teaspoon active dry yeast
Mixed in mixer....let rise 2 hours. Placed on floured board. Pressed flat
with fingers...6 x 8 inch rectangle, fold like a letter with long sides in, flip seam down and let sit about 10 minutes. This is preshape/bench rest makes the loaf taller. After bench rest, flip seam side up, press into rectangle again but this time roll it up,tuck sides under and make
a loaf, then put it into a greased 9 x 5 tin. Let rise to top of tin. Slash
down the middle bake 400 degree oven 25-30 minutes. Remove bread
and let cool on cooling rack. I brush with butter...I like a soft crust.
(This is a new recipe....I immediately mixed another loaf...and mixed
dough together in mixer and set to rise) I like to bake 2 loaves. Aria
