Any Home Bakers Here?

I hope the bread turns out better this time!
Major fail. In fact all projects yesterday were a major fail.
  1. Vacuumed the stupid pool - it was murkier after vacuuming than before
  2. Made Champlain bread per the new recipe and including the spelt flour Bob so kindly ground and mailed to me. 2.5" high :( The only time it was a bit higher was the last time when I doubled the starter AND added some yeast. It was still nowhere near as high as Ron's. DSCN2049.JPG
  3. Made the KA basic sourdough ... the top collapsed when I moved it (prior to baking) to make room for the very hot dutch oven. I haven't cut it yet. DSCN2050.JPG compare to the first time DSCN1999.JPG
  4. Spent 2 hours getting the front left tire off the garden tractor. I had bought a tube to put in it. After 2 hours I had gotten no further than the bead on one side of the tire being freed. Took another 1/2 hour this afternoon to get the other bead free then 1.5 more to get the tube in.
Apple products are better than microsoft in my opinion. They do it right the first time and don't have to run around patching things up all the time.
Welllllll, kinda. I'm currently on Catalina. There is a new named OS release every so often (no charge) and occasional "updates". I've had the "Updates Available" window up for a few weeks now. The "problem" is that unlike MS Windows, I don't HAVE to reboot the box with any frequency. As a result I've got a ton of windows up in 8 different "virtual desktops". If I let it update and reboot I'll have to recollect and arrange all those things. There are 18 tabs on my Chrome "forums" window, 15 are related to this thread.

Your yesterday sounds like my today Bruce. This year seems to want to fight about everything!

You are weighing the ingredients and not converting to cups?

Aria Sourdough Bread: 1 cup room temp water 2 1/2 tsp sea salt

2/3 cup sourdough starter 2 heaping cups bread flour
Combine the water and sea salt in a mixing bowl and dissolve. Add your starter and stir add your flour and fold in with a spoon or spatula. Mix until it becomes a rough dough ball.
Cover the dough in the mixing bowl with a cotton cloth and side on your counter for the day.....at least 8 hours
In the evening wet your hands slightly and pull the sides and fold it over itself. Pick up dough and tuck the sides under until you have a round shape ...dough quite sticky. In a bowl put a cotton cloth and dust with flour place your loaf down into the bowl and sprinkle flour on the underside as well. Tuck the cloth over the dough ..in the refrigerator
In the morning oven 450 degrees ..place your dutch oven in. Loaf out
of the refrigerator and in your dutch oven. Score top on and bake
30 minutes....lid off bake 10 minutes golden.
