Any Home Bakers Here?

Last night I put together some Champlain bread. Didn’t have the spelt or the rye, used white and ww. I watched a you tube video and so far it looks pretty good after 2 folds. My son gave me a Benetton basket for Christmas so I wanted to bake him a loaf for his birthday which is tomorrow. He doesn’t care much for cake so I think he’ll be pleased.

Using all white flour often requires extra flour.

I used whole wheat in place of the spelt and rye. It was fun to weigh all the ingredients! Yeah I don’t get out much, :gig
Thank you Ron for the tip! I’ve noticed that adding whole wheat to a recipe makes it drier. Fwiw it was also fun to do the folds! It was helpful to see what the dough looked like from the video. Mine may not look quite as silky but I did notice the different feel this recipe has compared to my other tries.
