Morning! Today is hubby's birthday. I am making his favorite dessert, lemon meringue pie. I'll see if what I learned after the last one keeps it from being lemon soup pie.

I'm also going to make stromboli for the first time for his birthday dinner.

He'll roll with however it turns out. He's a good man. I'm very lucky.

Lemon meringue is a top five for me. I know it's a simple bake, but wish I would have gotten my Mimmie's recipe before now. Bit too late & her recipe box got lost in a move, but I guess that means I'll just have to keep trying recipes til I find a close one

My recipe is from my MIL, a photo copy from a BHG cookbook, probably from the 60s. Hers always turned out great. Mine, while tasty, would turn into lemon soup with meringue on top. I asked our friend Google why, and it said that the meringue has to be put on the lemon filling immediately, while the filling is still hot. We'll see if that fixes the issue.

One year MIL came to our house for Thanksgiving. I made lemon pie, got lemon soup. If she knew the reason, she didn't tell. She laughed.
