Aria, if you have some small baking dishes (like ramekins) you could divide the recipe into portions and freeze them after baking. Then when you want one, pull the dish out of the freezer and let it warm a bit on the counter then bake (the bake time would change of course). That way you wouldn't have to make a whole big one at once.
I've even made a big one and then sliced after baking and frozen the slices.
