I often wondered about the drying out. When I first tried starters, I constantly struggled with the drying.
I wonder where the idea of not sealing starter comes from? I have always sealed the starter in the fridge. It will keep for a couple of months that way.
I’ve always seen the admonition that, as a starter ferments, gases will build up in a sealed jar and risk exploding the vessel. This makes sense, as other fermentation processes (beer making, for example) use bottles with release valves in the earliest stages.

I’m with @BigBlueHen53, $30 for a pair of jars is steep. If there’s a workable alternative using something I already have on hand, I would prefer that.

Have you ever had a jar lid pop, either in the fridge or out?
 
The jar is 1 litre. The is about a quarter of a gallon.

I use at lot of Sourdough. I made another jar. Now
have two. Use a little from each jar each week. Works. Like one a Spare going at the same time. I make 3 loaves a week usually and use l cup of Sourdough Starter for the 3 loaves recipe. Aria

I know where I got the idea of not sealing... The instructions with my GF starter talk about long term storage in the fridge and say nothing about it. I have the discard in a quart canning jar and just assumed that the plastic storage lid is use on opened jars of canned goods would be fine. It is not water tight, so not air tight either. I plan to get some of the leak proof lids at the store today. Will that be tight enough, @ronott1? They are plastic.

I understand all too well and you have my sympathies.

If there’s a workable alternative using something I already have on hand, I would prefer that.
I use a large square plastic container that came from Costco, originally full of mixed nuts. No problems. I don't think SDS will explode in the refrigerator, it is hibernating. Once out of the fridge I let it warm up then feed it and wait awhile before I use it. For that process I just set the lid on top.

Hibernation. Good way to put it.

I may continue to use my canning jars with the filter when it sits out and cap it when putting it to bed in the fridge. Unless I find those starter jars for a lot cheaper somewhere.

If it does explode in the refrigerator, I’ll be as mad as a wet hen, but the mess will at least be contained.
