Any Home Bakers Here?

Here is the Recipe...You decide.....THIS IS A NEW RECIPE 1/4 cup brown sugar 1/2 cup greek yogurt
1/4 Oat Milk l tsp vanilla l tsp almond extract 2 eggs 3 cups oats
1 tsp cinnamon 1/4 cup premium cocoa 1/2 tsp baking soda 1/4 cup avocado oil 1 1/4 oat flour l cup walnuts 1/2 cup chocolate chips Drop with teaspoons flatten with fork. Bake 350 oven 10-11 mins. I made 50 cookies.
Sally, This was a recipe...(working on for some time) it was worth it. It is delicious. I will be making them over and over again. HEALTHY low in sugar, low in all the BAD STUFF ...but they are so tasty. I will take a blue ribbon for this one...Aria

Do you think olive oil could be substituted for avocado oil?
 
Morning Home Bakers Rain stopped for few days..
Staying home brought a 2 pack of Lasagna at Costco.
Making fresh french loaf for garlic bread with it.. Use one tonight...
Second cup of coffee slow to start.

get going. I made an No Knead Artisan Long Loaf and Chocolate Oatmeal Cookies today. NOW trying to REST. Aria

Oven and Dutch oven preheating to bake some GF sourdough. Still not a lot of rise. @ronott1 is a 6-8 hour rise considered long, by sourdough standards? I'm going by a recipe for this, and it calls for 1.5 cups of starter and 6-8 hour rise.

I forgot that the next time (ie, this time) I make this bread, I was going to add 1/2 teaspoon of yeast and see if it has a little more poof. 🤦‍♀️

I do use Extra Virgin Olive Oil (get the Best Quality) they are rated...and it does work FINE.
In some of my Sourdough Loaves I sometimes use
1T Avocado oil and 1 T Extra Virgin Olive Oil (EVOO). WORKS FINE. Aria

Gluten free bread is weird usually in that it rises more from the heat instead of in the proofer.

The time proofing is more likely for flavor.

Hopefully it will raise in the oven for you!

I just put it in the oven. It doesn't look any taller, but it did spread out. We'll see what happens in 35 minutes...

Waiting for sourdough to thoroughly cool kills me! I want a hot chunk of bread, dripping with butter!
