I live in zone 9!You probably can grow ginger there. Google growing ginger in pots, that's how I do it here in 6b and it's easy peasy.
I used to live in zone 5 and now that I've been growing for 2 seasons I'm confident you could do it up there. I have enough that I'm trading about 4 pounds to a friend down in GA for some of her turmerics. Turmeric is grown the same way.
Neither will flower for you up there, but you are after the rhizomes anyway, and a good bright location in zone 5 should enable them to grow without issue. They like moisture, but not soggy soil. I use a decent potting mix with a large run off tray (for humidity) and water weekly.
In the winter I pull my pots inside to a bright window, water lightly, let them go dormant on their own, and grab fresh green ginger from the pot as I need it. It stays green and plump all winter despite no growth on top, and in the spring I set the pots outside for another season. Works like a charm.
I only plan to dry as much as will fit the trays., which is maybe half of what is left after mailing to my friend. I started with 1 pound of organic, sourced from a local organic store, right before everything shut down in March 2020, and probably have over 12 pounds now.

My friend lives in 8b (I think) and does hers in the garden.
You'll probably need a party shady area and if it's drier there, you might need to provide humidity.
