Any Home Bakers Here?

I've thought about trying to mill my own flours, but I spent my kitchen set up budget on other things instead. I love my KA Mixer and my Excalibur, but gosh, a way to mill my own flours would be wonderful.

Recently I bought some large quantities of oatmeal with the hopes of making my own oat flour, but haven't done it yet.
And yeah, I'm with you...flours that sometimes feel gritty often bake up nicely (IMO) so I'm not one of those who needs a certain brand of extra fine white rice flour. I myself prefer the brown rice flours even though they are heavier. They taste better.

Half oat and half rice...interesting. 🤔 Is that the ratio you started with? Or did you work in the oat flour once you had a good one going?
With all the oatmeal I have around waiting to be cut to oblivion, I could certainly start with a half and half and not cringe so much at the cost.
The KA attachment is about half the price of my wonder mill KA Attachment, Lots of options and pricesWonder Mill,
 
I love my wonder mill, but have never figured out how to get it to mill cream of wheat consistency. Flour and cornmeal no-problem.
What do you like about it over the KA attachment type. If you have never used one of the KA attachments, what do you imagine the Wonder Mill has over it?

I'm looking to do small batches of flours and probably grind spices too. Don't want to buy a separate coffee/spice grinder if a mill can do both. Based on the reviews of the KA attachment, it should do both flours and spices like ginger or turmeric on the level I'm thinking, but of course having never done that, don't actually know yet..

I don't combine. I have a coffee/spice grinder and a mill. I would fear the spice would get caught up in the stones and then be present in the flour. I don't have any experience with the KA attachment but I like that it has pre-defined settings for different coarseness. The wonder mill is play with two knobs until you get it right.
 
OK, I think my maples either a Norway Maple or Sugar Maple. Here’s why I think that.

I started with one cup of sap, and I boiled it down to one quarter cup. It hasn’t even begun to thicken, but it is EXTREMELY sweet already. I’ll have to go to my friends on the garden forum and see if they can ID it.

I know, it’s not much sap, but I was trying to figure out the ratio of sap to syrup for the future. According to the Internet, it’s close to 40:1. That means for every 40 gallons of sap, you get 1 gallon of syrup.
