Any Home Bakers Here?

What is this?!? Sounds intriguing.
Ugliest doggone cake you ever saw because it cracks and splits and the cream cheese mixture oozes up through the cracks. But everyone who has ever tasted it goes crazy for it. (I don’t ever eat it - I hate chocolate.) Fast and easy to make - Katie makes them all by herself for her family when they want a dessert or treat. She made her Dad’s birthday cake this way.

Earthquake Cake Recipe

1 German Chocolate Cake, mixed according to back of the box
1 or 2 cups Baker’s coconut, depending on how much you‘d like (some folks toast it - I don’t)
1 cup coarsely chopped pecans

Topping
1/2 cup butter
1 8 oz pkg softened cream cheese
1 tsp vanilla
2 cups powdered sugar (most recipes say 4 - tastes way too sweet to my crew, though)

In a well greased or heavily sprayed GENEROUSLY sized 9x13 cake pan, layer coconut, then pecans on top of that, then pour cake batter over all. Spread to evenly cover bottom layers
*Whip cream cheese, butter, powdered sugar and vanilla until fluffy
*Drop by big spoonfuls over cake batter. Swirl it around a bit but don’t stir it in
*Bake at 350 for 45-50 minutes

NOTES:
If desired, you can sprinkle on a layer of mini chocolate chips while the cake is still hot. Too rich and over sweet to us but does make for an extra layer of gooeyness.

Don’t get too close to the edge of the cake pan with the topping. As it bubbles up it can overflow. Ask me how I know that. <sigh>

All cake pans are not created equally - some are shallower than others. If yours is on the shallow side, or you aren’t sure, you may want to put it on a baking sheet when you put it in the oven. This cake is sticky! But Ken says still warm and with vanilla ice cream on it, that’s what Heaven must be all about!
